Although Italians are universally recognized as saints, sailors and poets, I think that we are above all a land of hungry people!!!!
It isn't easy to explain because tuscan land has many different traditions, so it is very difficult to find something really typique and particular , for the reason of the large number of peoples that in the past centuries have been in our country, the ancient so called Tuscia. Many different influences have determinated and changed our way of life guarded by our tradition.
Tuscia at first, and Etruria after, Tuscany is the land of Ethruscan people, who adduced to our tradition a special sign.
So the actual tuscan gastronomy can be rightly defined as a modern translation of the ancestral ethruscan gastronomy , and from this culture have been originated many recipes of the daily gastronomic practice.
I have to remember that there are many versions of the same dish, so you can find different cooking methods applied by different families in the same village.
The best recipe for every dish is caracterized by the "once-upon-a-time" taste, the mom's taste, as it was said in the past century... Today, in this world full of technology, it's even harder to find out this authentic taste.
I would be very glad if you could find in some of our dishes, specially in the simpliest ones made with humilty and patience, those lost tastes, those perfumes of good food for which everyone searches with nostalgy.
